Grilled Sea Bass with Sweet Chili Glaze recipe
Ingredients:
4 6-ounce striped bass or sea bass fillets
½ teaspoon salt
½ teaspoon freshly ground black pepper
¾ cup orange juice
¼ cup fresh lime juice
¼ cup sugar
2 tablespoons chopped garlic
2 tablespoons dark honey
1 tablespoon chili pepper
1 teaspoon soy sauce
1 tablespoon chopped fresh cilantro, for garnish
Directions:
1. Preheat grill to medium. Season fish with salt and pepper. Place on grill and cook until flesh flakes easily, 4 to 5 minutes per side.
2. Meanwhile, prepare the glaze. Place orange juice, lime juice, sugar, garlic, honey, and soy sauce in a small saucepan. Bring to a boil over high, reduce to a gentle simmer, and cook until thickened, 5 to 8 minutes.
3. When fish is done, remove from grill, spoon glaze over the fillets, and top with cilantro. Serve.
